Ingredients:
1 cup English Cucumber, Diced
1 cup Yellow Bell Pepper, Diced
1 cup Cherry Tomatoes, Quartered
½ cup Red Onion, Diced
½ cup Kalamata Olives, Diced
1 teaspoon Extra Virgin Olive Oil1
1 teaspoon Red Wine Vinegar
½ teaspoon Kosher Salt
½ teaspoon Dried Oregano
8 whole Fancy Pokket Mini Pitas or Naan
½ cup Hummus (red pepper)
½ cup Feta Cheese Crumbles
 
Directions:
In a large-sized bowl combine the cucumber, yellow bell pepper, tomatoes, onion, olives, olive oil, vinegar, salt, and oregano. For best taste mix together 1 hr before serving. Spread a tablespoon of hummus on top of each mini pita/naan. Divide the Greek salad mixture evenly on top of each pita. Top each pita with a tablespoon of feta cheese. Serve immediately.
Tip: This recipe is super easy to double or triple depending on the size of your group. GREAT for entertaining.
