This gourmet take on the familiar BLT is perfect for using up leftover bacon from breakfast.

Ingredients:
2 Fancy Pokket Bagels, split
1 ripe avocado, pit removed
4 strips cooked bacon, chopped
8 slices tomato
1/4 tsp (1 mL) each sea salt and pepper

Directions:
  1. Toast bagels.
  2. Using spoon, scoop out avocado pulp. Spread each bagel half with one-quarter of the avocado; sprinkle with bacon and top with sliced tomatoes. Sprinkle with salt and pepper.


Tip: A ripe avocado will yield to firm, gentle pressure when applied to the outside and have soft, yellow-green pulp on the inside.
