Smoky and sweet flavours come together in this quick weeknight meal that will please any pizza lover.

1 Fancy Pokket Flatbread (50 g)
6 oz (175 g) boneless skinless chicken breast
1 tsp (5 mL) vegetable oil
1/4 tsp (1 mL) each salt and pepper
1/4 cup (60 mL) prepared barbecue sauce
1/2 red pepper, thinly sliced
1/2 cup (125 mL) shredded Cheddar cheese
2 tbsp (30 mL) finely chopped red onion
1 tbsp (15 mL) chopped green onion


Heat grill pan over medium-high heat. Coat chicken with oil; season with salt and pepper. Grill chicken, turning once, for 8 to 10 minutes or until instant-read thermometer inserted into centre reads 165°F (74°C). Slice into strips.
Preheat oven to 425°F (220°C). Line baking sheet with parchment paper or foil. Spread flatbread with barbecue sauce; top with chicken, red pepper, Cheddar and red onion.
Bake for about 10 minutes or until Cheddar is melted and flatbread is golden and crisp. Sprinkle with green onion.

Tip: If desired, cut flatbread into small squares as appetizers; serve with ranch dressing for dipping.
