Ingredients:
1 Fancy Pokket Pita, cut in half
1 tsp (5 mL) vegetable oil
1/2 cup (125 mL) sausage, cooked and crumbled
1/2 cup (125 mL) each sliced green and red peppers
1 tsp (5 mL) butter
4 eggs
1/4 tsp (1 mL) each salt and pepper
2 tbsp (30 mL) shredded Cheddar cheese
1/3 cup (75 mL) prepared salsa
Directions:
- Heat oil in skillet set over medium heat; sauté sausage, turning once, for about 2 minutes or until heated through. Add peppers; cook for about 2 minutes or until tender-crisp. Remove from pan; set aside.
- In same skillet, melt butter over medium heat. Whisk together eggs, salt and pepper; add to skillet. Cook for 2 to 3 minutes or until soft curds form.
- Open each pita half and stuff with sausage, peppers and scrambled eggs. Top with cheese. Serve with salsa for dipping.
Tips:
- Cooked diced ham or crumbled bacon can be used instead of sausage.
- Chives or green onions can be added to scrambled eggs if desired.
